<span style="color: #444444; font-family: inherit;">Empezamos a preparar el adobo poniendo en un mortero los ajos laminados con un poco de sal y el aceite y lo majamos hasta obtener una pasta. Añadir el pimentón, las hierbas, un poco más de sal y seguimos majando. Añadir un poco de vino blanco y removemos bien.</span><br />

En una sartén, poner los champiñones que hemos picado a fuego medio con un poco de aceite para que se vaya rehogando.</span></span></div>

Añadir un chorrito de vino blanco, damos unas vueltas y retiramos. Fuera del fuego, incorporamos el queso. Sacar los champiñones que tenemos en el microondas, retiramos el exceso de líquido y rellenamos con la preparación anterior, presionando bien.</span></span></div>

<span style="color: #444444; font-family: inherit;">Forrar el molde con papel de horno y preparar aparte, una bandeja grande con agua para cocinar el cheese-cake al baño maría.</span></div>

<span style="color: #444444; font-family: inherit;">Precalentar el horno a 170º y calentar la bandeja con agua hasta que hierva.</span></div>

<span style="color: #444444; font-family: inherit;">En un bol, mezclar el queso con la leche y añadir 50 gr. de azúcar, las yemas, la maizena, la levadura y el zumo de limón. Mezclar muy bien hasta que desaparezcan todos los grumos.</span></div>

<span style="color: #444444; font-family: inherit;">Aparte, batir a punto de nieve las claras con una pizca de sal. Cuando empiecen a subir, añadir el azúcar poco a poco y seguir batiendo hasta que queden<u> bien firmes </u>(este paso es muy importante).</span></div>

<span style="color: #444444; font-family: inherit;">Añadir las claras con cuidado a la mezcla anterior con movimientos envolventes de arriba a abajo. Introducir en el molde y éste en la bandeja con el agua hirviendo.</span></div>

<span style="color: #444444; font-family: inherit;">Hornear unos 25 min. A mitad de cocción veréis que se forma una capa oscura en la superficie y se hincha bastante, no pasa nada.</span><br />

<span style="color: #444444; font-family: inherit;"><span style="background-color: white; line-height: 20.796875px;">Precalentar el horno a 180º. </span><span style="background-color: white; line-height: 20.796875px;">Engrasar una fuente de horno.</span></span><br />
<span style="color: #444444; font-family: inherit;"><span style="background-color: white; line-height: 20.796875px;">Cortar los croissants en trozos y ponerlos en la fuente engrasada.</span><br style="background-color: white; line-height: 20.796875px;" /><span style="background-color: white; line-height: 20.796875px;">En un cazo, poner el azúcar y el agua y calentarlo a fuego lento hasta que se disuelva. Subir el fuego.</span></span><br />
<span style="background-color: white; line-height: 20.796875px;"><span style="color: #444444; font-family: inherit;">Dejar que caramelice el azúcar sin removerlo durante unos 3 o 5 minutos. </span></span><br />
<span style="background-color: white; line-height: 20.796875px;"><span style="color: #444444; font-family: inherit;">Bajar el fuego al mínimo y añadir la nata. Remover y agregar la leche y la vainilla. </span></span><br />

Mezclar bien.</span><br style="background-color: white; line-height: 20.796875px;" /><span style="background-color: white; line-height: 20.796875px;">Verter la mezcla sobre los croisants y dejar reposar 10 minutos para que los croisants se impregnen de esta.</span><br style="background-color: white; line-height: 20.796875px;" /><span style="background-color: white;"><span style="line-height: 20.796875px;">Hornear 20 minutos o hasta que veamos que la crema esta bien cuajada.</span></span></span><br />

Una vez hervido, ponerlo boca abajo sobre un trapo limpio y dejar que se sequen. </span></span><br />

<span style="color: #444444; font-family: inherit;">Limpiar y abrir los mejillones. Yo los abro al vapor. Reservar los mejillones. Colar y filtrar el caldo de la cocción de los mejillones y reservarlo.</span></div>

<span style="color: #444444; font-family: inherit;">Pelar y picar la cebolla y los ajos finamente. </span></div>

<span style="color: #444444; font-family: inherit;">En una sarten, poner el aceite de oliva y rehogar la cebolla y los ajos. Una vez vayan tomando color, añadir el bacon y seguir rehogando hasta que esté bien doraditos.</span></div>

<span style="color: #444444; font-family: inherit;">Una vez tome el colorín, añadir el tomate y dejar cocinar 4 minutos más a medio fuego. </span></div>

<span style="color: #444444; font-family: inherit;">Añadir el vino y dejar reducir para que evapore el alcohol. Añadir unn poco del caldo de los mejillones y dejar que espese un poco la salsa. </span></div>

Añadir el huevo, batir y agregar la harina con la sal. Separar esta mezcla en porciones de 100 gr. aproximadamente y ponerle a cada una 20 gr. de la gelatina que hayamos escogido y la esencia de ese sabor si la queremos añadir. También se puede añadir una pizca de colorante si se quierem unos colores más intensos. Unir todo bien y colocar cada parte en el tubo de la pistola para galletas. </span></span><br />
